We were so happy to feature Rita who presented her project titled, Recycled Restaurant, at our event on April 2nd!  Read more about Rita’s project below:

 

Project Description

361 000 tons of food is thrown away every year in Norway. Around 80 000 tons still fresh, edible food is thrown away by farmers, producers and wholesalers.
Recycled Restaurant’s mission to collect good, edible fruits and veggies that these actors would otherwise throw and turn them into delicious food in a cosy restaurant.
It will be an inexpensive restaurant that would offer healthy and affordable meals for everyone.
Due to the unpredictable nature of food resources the restaurant would not operate with a fix menu but as a bistro, with a dynamically changing menu. One thing would be sure: The food will taste awesome!
The restaurant would drive attention to the environmental impacts on our current global food production system: Every second month a new exhibition would be dedicated to talk about global food production issues.

 

Why does this idea matter to you and to the city of Oslo?

It would help reducing Oslo’s food waste. It would align with “Matkastelov” that Framtiden i Våre Hender is proposing. It would create jobs: It would definitely employ cooks and kitchen workers. It would increase public awareness of global food production issues and food waste problems. Why does it matter for me? Waste reduction and environmentalism was always important for me. By getting up a restaurant run on food waste it would fulfil an old dream of mine.

 

How will you use this microfunding?

I would use this money to invest in running a pilot version of this on the next Restaurant Day. If there is any leftover I would invest in paying for all the things needed to start up this restaurant in Oslo.
